Ingredients
  • 2 eggs or 4 egg whites

  • Non-stick cooking spray

  • High fiber English muffin or bagel

  • Toppings of choice

    • ~ 1/2 c veggies: tomato, spinach, pepper, mushroom, etc.

    • 2 oz protein: turkey sausage, ham, etc.

    • 2 oz fats: avocado, slice of cheese, etc.

Instructions

Toast bread. Spray microwave safe bowl with cooking spray and crack eggs into bowl, scramble and place in microwave.

  • Toaster

  • Microwave

  • Cutting board & knife

If adding any protein or cheese, remove egg from microwave and top with protein and cheese, place back in microwave and microwave for additional 30 seconds.

Microwave for 60 seconds. Check level of 'doneness' (egg should not be runny), if still runny, microwave for an additional 30 seconds.
