Chicken, spinach and pesto pasta

Ingredients
  • 1/2 lb. shredded rotisserie chicken

  • 1 container sliced mushrooms

  • 1 c spinach

  • 1 dry cup high fiber pasta

  • 2-3 tbsp pesto sauce

  • 1/4 cup parmesan cheese

  • water

  • 1 tbsp olive oil

Instructions

Fill sauce pan with water and bring to a boil. Add pasta and cook per instructions on package.

When pasta is done cooking, drain and mix into pan with chicken mixture.

While pasta cooks, sauté mushrooms and spinach in sauté pan ~5 minutes, add in shredded rotisserie chicken and pesto, mix until combined.
