Ingredients
  • 1 bag steam-able rice

  • 1 can black beans

  • 1/2 lb. shredded rotissaire chicken

  • 1 bag precut fajita veggies

  • Olive oil and lime juice

  • Optional toppings (salsa, jalapeños, avocado crema, guacamole, etc.)

Instructions

Prepare rice per instructions on bag. Open beans and rinse and drain in colander. Cut lime into quarters.

  • Colander & can opener

  • Microwave

  • Sauce pan

Drizzle olive oil in sauté pan and add fajita veggies, top with lime juice and salt and pepper to taste. Sauté for 5-10 minutes.

Place rice in microwave safe bowl with beans mix until combined, microwave for additional 1-2 minutes.

*Recipe makes between 3-4 servings.

Assemble ingredients to your liking, with ~ 1/4 of plate being chicken, ~1/4 of plate bean/rice mixture and ~1/2 of plate veggies. Top with toppings of your choice.
