Shrimp and kimchi tacos

Ingredients
  • 1/2 lb. of cooked shrimp (tails removed)

  • olive oil and lime juice

  • 1/2 c kimchi

  • 1/2 c broccoli slaw

  • 3-6 small corn or whole wheat tortillas

  • toppings of choice (sriracha, cilantro, etc.)

Instructions

In a sauté pan, add a drizzle of olive oil and lime juice. Sauté shrimp for ~5 minutes, set aside.

Assemble tacos by layering a line of broccoli slaw, kimchi and shrimp in the middle of each taco.

Add additional toppings of your choice.
